Roasted Potato and Garlic Bread

I have enjoyed making some great sourdough breads over the last year so I thought I would share a couple snaps of my breads.

This is from a post I made on the Dan lepard discussion forum.

Here is screen grab of my excel for Roasted Potato and Garlic Bread that I adapted from Hamelman’s book. The dough was very wet and I thought I might have a regrettable bread, but it turned out very light, moist, and delicious.

  • roast both the potatoes and garlic in a pan with a little olive oil.
  • chop the roasted potatoes up with the skin on them and just add the soft garlic in the mix.
  • mix everything except the salt in your Kitchen Aid for 5 minutes
  • let it set for 20 minutes and add the salt and mix for 5 more minutes.
  • DL kneading throughout the next hour then…
  • folded twice in the next two hours.
  • form and raise for 45 minutes
  • bake with steam at 475 for 40 minutes

Pretty amazing flavor and even fussy kids ate it.

These are sourdough breads, the loaf at the front is a raisin whole wheat everyday loaf that I modified from a recipe by Nancy Silverston.  Everyone likes it, ya I put a bunch of real butter in it!
